Have you ever played the game where you open a book just to see what page you land on, expecting it to speak to you in some way? It’s silly, I know. But I resorted to playing that game with this month’s Cellulite BOTM to come up with an idea for today’s post. And wow, the subject is a real humdinger.The Truth About Beauty by Kat James, page 73, “How Cow’s Milk Fell from Favor.” Yikes!
Dairy: The Good, The Bad, and The Ugly
If you’ve been following along closely here at The Cellulite Investigation, you might know that I drink unpasteurized milk because I believe the nutritional value of dairy is lost during the pasteurization process, making the finished product virtually void of nutrients and difficult to digest. To be completely honest, I was hesitant to bring up the issue of pasteurization because it is such a loaded subject (which reminds me, I better prepare a solid disclaimer for that new site. You all know I’m not a doctor or a healthcare professional, right?).
I’m sure we’ll discuss milk a lot more in the future, but until then, here’s what Kat doesn’t like about dairy. She points out the modern inventions that changed the quality of dairy for the worse, such as artificial hormones, pesticides, and pasteurization. But she is also concerned with how milk affects blood sugar levels. Since dairy contains sugar, it needs fat so as not to spike blood sugar. Being the smartie that he/she is, God went ahead and added it in there. Reduced-fat milk has a higher glycemic impact because it has less fat to help slow digestion of the sugar. Fat also helps us absorb the minerals dairy contains, including calcium.
Smoothie Perfection
After her explanation of how milk fell from favor, Kat includes instructions for how to build a perfect smoothie. Since I can’t give away all her secrets (I need to leave you a reason to read the book, right?!), I will tell you how I make my morning smoothie instead. It might not be “The Perfect Smoothie,” but it keeps my energy levels high all morning and I don’t start to feel hungry until just before lunch.
First, I start with some berries and a banana (although Kat would advise against the banana if you are “metabolically-challenged”). Then I add ground rosehips for Vitamin C and maca powder, since I’m still working on getting those dang hormones in balance. Finally, I add coconut oil and two raw egg yolks before filling it all in with goat milk kefir.
There are a million variations on this theme. I’m always looking for new ideas to pack even more nutrients into my morning smoothie. So please share… what’s in your perfect smoothie?

I drank kefir smoothies for over a year. I like with hemp seeds, etc. Then wondered if my lupus was getting worse b.c of dairy comsumption…so cut it out and miss them terribly! I drink Kombucha now…and am giving away SCOBYs

That’s funny, Lib –I switched from kombucha to kefir because of my fluoride sensitivity. As long as you’re using organic tea it’s probably not a problem, I just cut it out to be safe.
